Summary of Tokaj Grape Varieties
The Tokaj Wine Region currently has six authorized grape varieties. All of them are white grapes and are capable of producing world-class dry wines, late harvest styles, and the legendary Aszú dessert wines.

1
Furmint
The "flagship" variety, covering about 66% of the region's vineyards.
-
Characteristics: High acidity, rich extract, and excellent susceptibility to Botrytis cinerea (noble rot).
-
Aromas: Fresh notes of green apple, pear, and citrus; with age, it develops complex mineral and honeyed notes.
-
Role: The backbone of most Tokaji wines, from bone-dry single-vineyard selections to the finest Aszú.
2
Hárslevelű (Linden Leaf)
The second most common variety (approx. 19%).
-
Characteristics: Named after its leaf shape, which resembles a linden tree. It has long, loose clusters.
-
Aromas: Highly aromatic with notes of linden blossom, elderflower, and honey. It has a softer acidity than Furmint.
-
Role: Adds elegance, floral perfume, and a silky texture to blends.
3
Sárgamuskotály (Muscat Blanc à Petits Grains)
An ancient, world-renowned variety (9% of vineyards).
-
Characteristics: Early ripening with intense, unmistakable primary grape aromas.
-
Aromas: Orange blossom, exotic spices, and fresh Muscat grapes.
-
Role: Mostly used for fragrant dry wines or as a perfumed component in late-harvest cuvées.
4
Kövérszőlő (Fat Grape)
A traditional variety that was nearly lost after the Phylloxera plague but is now being replanted.
-
Characteristics: Large, "fat" berries with high sugar-gathering potential.
-
Aromas: Honey, apricot, and propolis.
-
Role: Mainly used for sweet blends and Aszú production due to its ease of botrytization.
